Roaster Notes
Mexican coffees are typically smooth, sweet, and mellow, but Santuario’s unique microclimate—created by shade trees and rich biodiversity—allows for slower maturation, enhancing flavor complexity. Farmers cultivate heirloom varieties like Caturra, Bourbon, and Typica, which thrive in this environment and are processed using a traditional washed fermentation method for refined clarity and depth.
Since 2005, Wonderstate Coffee has been roasting spectacular coffees that spark connections, inspire curiosity, and build integrity across communities. We owe our livelihood and daily coffee ritual to our producers whose passion and care for the land make for some of the most excellent coffees in the world. Our sourcing model and minimum pay price allow us to center the voices of the smallholder farmers in all we do. Not only is it our responsibility to pay producers fairly, it is an investment in their work and in the future of coffee.
