Ixlama is a coffee born out of collaboration. It is the culmination of work by over 100 family producers in the Guatemalan municipalities of San Pedro Necta and La Libertad in the department of Huehuetenango, a region known for rugged landscapes and high elevation. The crop, consisting of half Bourbon and half Caturra varietals, is shade grown and then sorted and milled at Transcafe's mill at Caserio Teogal Adea San Martin. The mill uses 'guardiolas', a coffee dryer patented by a Guatemalan resident in 1872, after coffees are sun-dried on cement patios.

Methodical Coffee opened their cafe in 2015 in Greenville, South Carolina with pennies in the bank. Luckily, their first day of trade saw a line out the door that stayed there until closing time – popularity hasn't waned since! They claim their success is based on three pillars: exceptional product, customer service and experience. Their roasting operation began in 2016 and strives to bring the same quality, service and experience to all their customers.
