We look forward to Grace Calderón's coffee every year. This small one-hectare farm (just around 2.5 acres) nestled 1885 meters above sea level is home to the Caturra varietal managed by Grace. Because it means we can create The Ace: El Alto White Honey. The processing method widely used in Costa Rica is the honey method. The skin and most of the fruit is removed, leaving a thin layer of pulp behind to soak for a short time activating a mild fermentation. The final result is a beautiful single origin, perfect for any brew method, that tastes of marshmallow, graham cracker and chocolate.
