La Roca is a single origin hailing from six producers located in the mountains between Nicaragua and Honduras. Across all farms the fruit is fermented (soaking in a mixture of water and their own fruity pulp) in small, tile-lined tanks overnight. After the soak, some of the coffees are dried slowly on raised beds in the cooler, high elevation air while others are taking down the mountain to a mill still in wet parchment. Here the warmer temperature permits a faster drying time. The result? A light, citrus sweet coffee perfect for filter.
