Roaster Notes
Guaya'b means 'mutual support' in the indigenous Mayan language Popti. Nearly all of the 600 members of this 34-year-old cooperative are of Maya descent. The cooperative invests in sustainability, as demonstrated by their many certifications: Smithsonian Bird Friendly, Organic, and Fairtrade. The coffee is grown under lush shade canopies, which create habitats for native and migratory bird species. This year's harvest is a stunner: syrupy chocolate with complex stone fruit accenting the cup make for great brews and amazing espresso.
They took a pioneering approach to sourcing coffee through a relationship model, placing emphasis on direct trade as a way to support thriving livelihoods for producers at origin. They earned Roast Magazine's prestigious 'Roaster of the Year' award in 2013, are home to the first barista union in the USA and are currently transitioning to a worker-owned company. Gimme! Coffee roasts all their coffee on two Probat drum-style roasters at their facility in Ithaca, NY.
