The EA (Ethyl Acetate) decaffeination process involves several steps to effectively remove caffeine from coffee beans while preserving their flavor. Initially, the beans undergo pre-treatment by steaming to remove the silver skin. They are then moistened with hot water to swell and soften. The extraction phase follows, where the beans are repeatedly washed with ethyl acetate to remove caffeine. After extraction, low-pressure steam is used to clean the beans and remove any residual ethyl acetate. Finally, the beans are vacuum-dried to restore their original moisture content. This process removes over 97% of the caffeine, results in about 3% weight loss, and ensures that 60 bags of 70kg green coffee yield 58 bags of 70kg decaf. Ethyl acetate, derived from fermented sugarcane, is used in this natural process, which maintains the integrity of the coffee's flavor.
