The Future is anerobic coffees, a remarkable celebration of fruit forward, sweet and juicy coffees normally only found in high elevation growing regions. While the process is not new, it is newish to the coffee industry. Green coffee is held in an oxygen-free environment for an extended time (the coffee can be whole or pulped) to promote lactobacillus growth. Increased lactobacillus brings the fruit bomb to the cup. Fabulous as filter brew, get ready to remember the childhood flavors of fruit- loops in the cup.

The Future is the future of coffee. This is an anaerobicly processed coffee: a coffee that's held in an oxygen-free environment for an extended time (the coffee can be whole or pulped) to promote lactobacillus growth. Increased lactobacillus results in a more vibrant coffee both on the cupping table and in the cafe and is often only achieved by coffees grown at high elevation. You may recognize that termimolgy from the natural wine and craft beer industry. Whether you heard of it or not the results are where it's at. We celebrate a juicy, tropical and complex brew, best extracted as a filter coffee, especially the Hario V-60.
