This is our first Supersonic natural coffee on the bar—and it’s not what we expected. Where this process is usually big and wild, this one holds back just enough. Apricot jam leads the cup with soft sweetness, giving way to smooth milk chocolate and a light floral lift—think lychee, but subtle. What caught our attention was the clarity. It’s a lively cup, yes, but there’s balance too. Clean, expressive, and a little bit unexpected. A standout filter, and surprisingly refined through espresso. This coffee is bright and clear, with the soft sweetness of apricot jam leading into smooth milk chocolate and a light, floral hint of lychee. The flavors are vivid but never cluttered — each one steps forward in turn, clean and confident. Supersonic processing is usually bold and wild, but here it’s refined. The cup shows an uncommon clarity for such an intense method, balancing fruit richness with a polished finish. It’s both expressive and composed — a lively, elegant cup.
