Roaster Notes
The washing station here receives cherry from nearly 500 smallholder farmers, most of whom grow coffee on small plots alongside other crops, without the use of fertilisers or pesticides. Throughout the harvest, farmers deliver their cherry to the station where it s sorted, weighed and processed, then dried on raised beds. We return to this same washing station year after year, working closely with our export partners to maintain that connection and consistency in the cup.
